Reserve Your TableOur Philosophy
Food as a
Conversation
At Indigo Table we believe the best meals are shared ones. Our menu draws on the culinary traditions of Japan, Korea, Vietnam and China — not to fuse them arbitrarily, but to celebrate the thread of brilliant flavour that runs through all of them.
Everything is made in-house: our kimchi ferments for six weeks, our dumplings are folded to order, and our broths simmer overnight. The natural wine list is curated to complement, not compete.
Our Story
From Two Kitchens
to One Table
Indigo Table was founded in 2019 by chefs Ji-Yeon Park and Callum Fraser — one with roots in Seoul, one from the Highlands. Their shared obsession with fermentation, fire and flavour led to a restaurant that resists easy categorisation.
The space itself is deliberately intimate — 36 covers, dark walls, low lighting and the sound of a kitchen doing serious work. We've been named one of Scotland's best restaurants three years running by the Sunday Herald and Square Meal Scotland.
